Carne Asada Breakfast Sandwich

Prep time: 10 minutes

Cook time: 25minutes

Pre-marinated carne asada (1.5lbs)

Brioche buns (6pack)

Avocado (2)

Mexican cheese blend (1 cup)

Eggs (1 per sandwich)

Bacon (1 slice per sandwich)

Salsa (optional)

  1. Heat 2 pans (cast iron preferred), super hot!! One pan for bacon, one pan for carne asada. Pro Tip* Splash a tiny bit of water on your pan, if it sizzles, you're ready to go!

  2. Once pans are hot, place bacon in one, and your carne asada in the other.

  3. Cook carne asada about 5-6minutes on each side. When it starts to brown with a nice sear, you can flip it.

  4. Cook bacon about 8minutes on each side. Cooking time may vary based on your pan and heat. When it starts to get nice a crispy, flip them.

  5. Once your carne asada is cooked on both sides, let it rest on a cooking board for about 5 minutes. You don't want to cut it too early and lose all the flavor and juice!

  6. Take bacon out and place on a paper towel to drain and cool. Remove pan from heat.

  7. While your meat and bacon are resting, you can pop your eggs in the same pan as your bacon and cook until desired sunny-side up consistency. You can also drop a bit of butter in there for some extra flavor. Eggs will take about 6minutes to cook.

  8. Last step in the pans, drop about a 1/2 tablespoon of butter in either pan, gently place your brioche buns to lightly brown them for a nice, crisp edge. You will only want to place them in the pan for 30sec-1min, you don't want them soaked, just lightly browned!

  9. Assemble! Start with mashing avocado on your bottom bun, layer carne asada, add cheese, top with egg and bacon slices and finish with the bun top!

  10. You can also add salsa or leave on the side for dipping

Happy Eating!!
