Mid-Week Meal...For the Busy Bees!

Don't sacrifice your dinner because it's the middle of the week! We're tired, busy, counting down the days until Friday...but don't fall into the easy routine and settle for fast food! This dinner is super easy, even for the busiest families! This is pretty much a "set it and forget it" meal and loved by the whole family! As an added bonus, this is low-carb and perfectly filling!

Oven-baked Applewood-smoked Chicken and pan-fried Bacon and Asparagus


Applewood Chicken (this is from Sam's Club) 1lb*

Bacon (3 strips)*

Asparagus (5)*

Optional seasoning- Pepper, onion, garlic.

*These ingredient amounts are for 2 people, you can always add more for the whole family!


  1. Set your oven to 425 degrees and place your chicken in glass casserole pan. Cook chicken for 45 minutes, or until cooked through

  2. While chicken is cooking, heat pan on the stove on high heat. Cut bacon into small pieces and drop in pan. Let bacon cook untouched for about 5minutes until it starts to brown

  3. Cut off asparagus bottoms and throw away, then cut into pieces to cook. Toss asparagus in pan with bacon and reduce heat to medium-high. Here you can toss in some seasoning. I went with pepper, dried onion, and minced garlic. I did not add salt because the bacon was salty enough :)

  4. Veggies and bacon should only take about 10-12minutes to cook, so you can leave it on low heat while the chicken is wrapping up in the oven

  5. Plate your veggies, slice your chicken, pour a glass of wine....and enjoy!!
